In 1989, renowned plastic surgeon and wine connoisseur, Dr. Jose Miguel Zarhi Troy, started a vineyard planting the first Chardonnay vines in his “Fundo Santa Cruz de Coya” property in the Alto Cachapoal Valley at 1.000 meters above sea level. Other vine varieties and a winery will come afterwards into a passion project that will yield some of the most high-end wines Chile has to offer.
At the end of 2018, while looking to expand the Calyptra Winery project, Dr. Zarhi decides to head to Mendoza, Argentina and partners with Lic. Fernando Rodriguez Merino, an IT businessman from Mendoza. Mr. Rodriguez Merino has been deeply involved in the wine, hospitality, and gastronomic sector since 2007. The joint venture formed between Dr. Zarhi and Mr. Rodriguez culminates with the acquisition of a lot in one of the best wines growing regions of Argentina, Los Árboles de Villegas en Tunuyán, situated in the heart of the Uco Valley at 1.250 meters above sea level.

“Calyptra” comes from the greek word “calyptros”, meaning hat.
“The calyptra is the hat of the vine flower, which protects the reproductive apparatus of the plant. The vine flower, in order to bloom, loses that hat in the springtime. Therefore, we can say that: "the flower of the vine greets spring by taking off its hat...”
The logo was designed after graphically simplifying the process were the flower releases its calyptra, saluting the arrival of springtime.
